Betsy Bentley, bartender at The Dublin in East Hampton. (Melissa Byron, Special To The Courant / February 5, 2014)

What's the best drunk confession you've heard?

I see more than I hear. Although, there's always the cheating on the spouse; there are so many of those in this town... I seem to be the one people confess things to. I've bartended on and off for 16 years.

What does your dream bar look like?

A small intimate tavern, with an old wooden bar and wine bottle lights. I love neighborhood bars; it's a happier environment, and you get to know people a lot better.

The best drink you've had recently?

A double chocolate martini at Mohegan Sun. It had Godiva chocolate liqueur. It was so good. I also love our lemon drop martinis that we make. I don't drink much though. I have three kids, and I have two messed up kidneys.

Is there a drink people order that make you think that they're probably an alcoholic?

Oh yeah: pretty much anything really strong ordered before noon, like the 'Shipwreck', which has four kinds of rum and assorted juices in it. It's served in a pint glass.
