Mystic Drawbridge Ice Cream
Cheryl Robdau opened Mystic Drawbridge Ice Cream, which sits right above the Mystic River, about 20 years ago. She says a great sundae starts with high-quality ice cream. Hers is all homemade; the brownies in her Brownie Overload Sundae are freshly baked, and the chocolate in the ice cream is cocoa from Belgium.
Vanilla is the most popular flavor for sundaes, but Robdau also makes a Lemon Chocolate Kiss ice cream with fresh lemons and chocolate shavings that melt in your mouth. All the fruit in a variety of fruit-based ice creams at Mystic Drawbridge is fresh. In the fall, Robdau makes an Apple Pie ice cream by baking a homemade pie and then mixing it into ice cream. As for sundae structure, she says: "We like to put the ice cream in the cup first and then form a little moat around it for the sauce and toppings and then of course the whipped cream. That way, you get a little bit of everything with each bite." Robdau is a believer in all-natural whipped cream -- and lots of it -- on sundaes. "You should see kids' faces light up," says Caroline Thompson, 16, of Mystic, who works in the shop. "'It's huge!' they'll scream. It's a big deal." "Whipped cream is where it's at," agrees Tory Myshka, 18 of Mystic, as she rings out another customer. "For myself, I always make sure there is extra whipped cream."
