It’s a farm to table experience that takes “just picked” to a whole new level.
A year ago, Pond Hill Farm in Harbor Springs began offering farm to table dinners, served in their newly renovated barn.
Owners Sharon Spencer, her son, Jimmy, and his wife, Marci, thought it would be a great way to see the farm’s fresh produce and farm raised meats cooked and presented in an elegant way to customers.
They brought in chef Scott Schornak, and a new dining experience was born.
“We believe it is important to know where and how your food was grown,” Marci said. “Eating local reduces shipping and allows for a fresher product and creates less pollution. We host many field trips at the farm and we ask the kids if they eat plants and so many of them say, ‘no way!’”
“We feel as if a child is more likely to eat a tomato if they had a part in planting the seed and helping it grow,” she said.
For the dinners, Schornak prepares a variety of dishes for the several course meal — with such pairings as hoisin duck and stuffed pattypan squash.
“I will always remember our first dinner as my husband Jimmy was presenting the first salad course and he said the poached egg on your salad has never seen a refrigerator. The entire room broke into applause and I remember t hinking that we may be onto something here,” Marci recalled. “This community is really supportive of the eating local movement and is appreciative of real, organically grown foods.”
The farm strives to use as many of its farm raised ingredients as possible for each course.
The wine tasting dinners include a four-course meal paired with four of the farm’s favorite wines.
The farm to table dinners include appetizers and a four course meal.
The next dinner, scheduled for Saturday, Sept. 17, includes a main course of grilled pork loin with apple and onion compote and roasted root vegetables.
Dinners will continue until the end of October.
