Charlie's Produce and Nursery in York County: Gilda's pumpkin pie recipe

Gilda Banks, co-owner of Charlie's Produce and Nursery on Route 17 in York County, makes this pumpkin pie annually; call Charlie's at 890-3000.

1 cup of Charlie's pumpkin (see directions below)

2 eggs

2/3 cup sugar

2/3 cup condensed milk

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 teaspoon ginger

1/4 teaspoon nutmeg

1 teaspoon cinnamon

1 readymade graham cracker pie crust

Preheat oven to 375 degrees F. Makes one 9-inch pie.

1. Cut pumpkin into pieces and bake on cooke sheet until tender. Gilda bakes her instead of boiling because pumpkins retain lots of water and that takes away from the flavor.

2. When cool enough to handle, pull skin off pumpkin and wash well. Don't use skin or seeds.

3. Firmly pack pumpkin when measuring.

4. Combine eggs, pumpkin, milk, sugar, salt, nutmeg, cinnamon and ginger in blender or mixer. Blend until smooth. Pour into crust and bake at 375 for 50 minutes.

Tip: Any spice in pie that you dislilke can be deleted and replaced with 1/4 teaspoon allspice.
