Peeps Italian Ice

3 cups water 8 peeps marshmallow bunnies 1 cup sugar 1 teaspoon lemon juice 1. In a 1-1/2 to a 2 quart saucepan, bring the water, peeps, and sugar to a boil over moderate heat, stirring until the sugar dissolves. Once the water begins to boil, let the mixture cook for 5 minutes. Then remove the pan from the heat and let the syrup cool to room temperature. 2. Once at room temperature, stir in the lemon juice. 3. Pour the mixture into a container, recommended an ice cube tray with the dividers removed. 4. Freeze the syrup for 3-4 hours, stirring every 30 minutes and scraping the ice particles that form around the edge of the tray. The finished ice should have a fine, snowy texture. If you want a coarser texture, leave the ice cube divider in the tray and freeze the syrup solid. Then, remove the cubes and crush them in an ice crusher.
