Blend thoroughly, in a food processor:
2 cups smooth peanut butter
1/2 cup regular white vinegar
1/4 cup lite or regular soy sauce
2 Tablespoons of chopped garlic
1/2 red bell pepper, cut in large pieces
5 cut-up Peeps, any color
2 teaspoons salt
Place mixture in bowl and add:
1/2 cup of toasted sesame oil
2 teaspoons of chili oil
Gradually stir in:
1 cup chicken broth or freshly brewed strong tea.
Bring to a boil, in a large pot:
4 quarts of water
1 pound multigrain pasta, such as linguine or Chinese egg noodles
Place hot noodles on a bowl-like platter and toss with all of the sauce. Sprinkle with chopped spring onions.
Makes 4 to 6 servings.
(Shredded chicken may be added or the ready cooked chicken pieces which can be purchased
at the store.)
