Vegan Banana Craisin Cookies

Ella Marcovitz, a 14-year-old vegan, came up with her Banana Craisin cookie while at camp last summer. While the other campers were busy making chocolate chip cookies, which she could not eat because they contained eggs, she figured out how to make a delicious vegan-friendly cookie with a few ingredients on hand at camp. Her inventiveness led to the creation of a moist, flavorful treat free of animal products.
Makes: About 12 cookies
1/2 of a ripe banana
1/4 cup organic brown sugar
1/4 cup organic evaporated cane juice sugar (white sugar may be substituted)
1 teaspoon vanilla extract
1 cup flour
1 teaspoon baking soda
1/4 cup oil
1/3 cup Craisins (dried cranberries)
Preheat the oven to 375 degrees. In a large bowl, mash the banana with a fork. Add the brown sugar, evaporated cane juice sugar and vanilla to the banana and mix until the sugar is wet. In a small bowl, mix the flour and baking soda and add to the banana mixture. Mix until the flour is just barely wet. Add the oil and craisins and mix until the oil is combined. Drop by rounded teaspoons full onto parchment lined cookie sheet. Bake for 9-11 minutes or until the cookies start to turn brown. Let cool for 10 minutes.
